Actually Easy Sous Vide Corn On The Cob Recipe!

Today you’re going to learn all about the steps and techniques to make perfect sous vide corn on the cob. This recipe is a preview of what you’ll find in my friend and fellow blogger Jenna Passaro’s cookbook: The Home Chef’s Sous Vide Cookbook  (it just came out earlier this month!). She loves sous vide corn on the cob because she likes to eat restaurant-quality food at home, even (maybe especially!) when life gets busy with running a business and having a baby. Sous vide makes it super duper easy!

Are you a sous vide-r? I only really ever thought of sous vide as a fun, Frenchy way to make steak or other meats. But it’s incredibly versatile, surprisingly easy, and a great way to cook a lot more than just meat!  This corn on the cob recipe will have you planning summer barbeque meals in a whole other way. The corn is poached in butter (YUM!), instead of boiled in water, so you don’t lose any of the corn flavor or the crunch. The corn is juicy and buttery without losing any of the nutrients or flavor.

And the best part? It’s restaurant-quality without having to be in the kitchen for hours using all of your pots and pans. It cooks so quickly you’ll have tons of time to come up with plenty of corn-y puns.

Sous Vide Corn

4 servings

Cook time 45 minutes

Corn cooked sous vide style is ready to be eaten right out of the bag, but I love finishing it on the grill when we BBQ. Corn on the cob is one of the fastest sous vide recipes, and the flavor of the corn turns out unparalleled with any other method of cooking it.

4 ears of corn, shucked

4 tablespoons butter

1 teaspoon salt

To finish

Fresh cracked pepper, to taste

¼ cup cotija cheese

1 lime, cut in wedges

1 tablespoon cilantro, fresh, chopped

Sous Vide Corn

 

  1. Preheat sous vide machine to 182ºF.
  2. Vacuum-seal corn, butter, and salt in a flat layer and drop the bag in the sous vide bath at 182ºF for 30 minutes. When done, remove the corn from the hot water. Remove corn from the bag.
  3. Enjoy as is or grill to finish on high heat, rotating a couple times, every 30 to 60 seconds, to get some grill marks.
  4. Plate and serve with fresh cracked pepper, cotija cheese, a squeeze of lime, and fresh cilantro.

 

Substitution tip: You can swap in queso fresco for the cotija cheese.

Everyone knows that a cookout or BBQ includes fresh corn on the cob. Pair it with delicious smoked pork chops for a tasty meal that your family will be asking for seconds.

  1. I’m embarrassed to admit, but I didn’t know what Sous Vide was until I read this post, lol! I too have been doing it with my meats but I didn’t know that’s what it was called. I can’t wait to try this with corn, I know it’s going to be amazing!
